SERVES 36 This playful recipe strikes an appealing balance of temperatures and salty and sweet flavors.
3 tbsp. sugar 3 cups passion fruit juice 1 bottle of Champagne 1 cup Champagne vinegar 1 tbsp. black pepper, crushed 1 tbsp. kosher salt 1 1/2 cups shallots 36 oyster, shucked 1 tsp. habanero Tabasco sauce
1. To make granita, combine passion fruit juice and sugar in a medium saucepan. Stir mixture over medium heat until sugar has completely dissolved. Remove mixture from heat, then add Champagne, vinegar, pepper, salt, shallots, and Tabasco sauce. Transfer to a metal bowl and freeze.
2. After the granita has frozen, remove from freezer. Place the bowl on a counter and scrape surface of the granita with a fork until the mixture breaks down into chunky ice granules.
3. To prepare slider, place one shucked oyster on a small dish and top with a teaspoon of granita.
