Grilled fish always sounds so appealing—the delicate flesh perfumed with that sweet smoky flavor. Except that the delicate flesh sticks to the grill. And just when you're thinking about how you will wow family and friends with a great presentation, you flip the fish and half its stuffing falls into the fire. Maybe you should try a fish rack. We found one we like at Crate & Barrel, though most houseware and kitchen stores also carry them. It works: The fish stays whole, the stuffing stays in, you look good.
