Certain special-occasion sweets are so good and so easy to make that they become year-round favorites. That's what happened with Bizcochitos, New Mexican anise-seed cookies originally baked for holidays. Delicate and crumbly (their texture falls somewhere between those of shortbread and sugar cookies), with a dusting of spicy, sweet cinnamon sugar, bizcochitos have such a powerful appeal that even traditional bakers now make them any old time.
