A Brunch For The Day After Thanksgiving

Though we all love making a breakfast out of leftover pie on the morning after Thanksgiving, break into a few more of the covered casserole dishes this year to put together a complete brunch menu with minimal cooking. Slices of turkey breast fill the open faced hot brown sandwich, extra cranberries bake into simple cakes, while leftover roasted veggies and mashed potatoes become satisfying bubble and squeek. All you need to make from scratch is a big batch of extra-dirty bloody Marys.

  1. When making the bubble and squeak, skip the first steps of roasting the vegetables and boiling the potatoes, and simply use any leftover vegetables and mashed potatoes that you have from Thanksgiving dinner.

     
  2. Instead of making a fresh batch of cranberry-apple compote for the upside-down cakes, you can use leftover cranberry sauce if you've got it.

     
  3. If you're serving Dirty Marys to a crowd, simply multiply the recipe to serve the appropriate number and mix larger batches at once in large pitchers.
