  2. To sneak more sleep the morning of brunch, get started the night before: the collard greens, shrimp and grits, Cajun Benedict and Cajun crawfish eggs can all be prepared through step one, and the bread pudding can be made through step two.

  3. Cooking the collard greens in the juices leftover from browning the Cajun Benedict's boudin patties will infuse the greens with a deep sausage smokiness.
