Planning Tips

  1. The shrimp and herb butters as well as the tuna mixture for the canapés can be made several days in advance and refrigerated until assembling just before serving.

  2. The filling for the Chinese chicken wraps can be made the day before, then spooned into the lettuce cups just before serving.

  3. For easier serving, pre-make the cocktails in large batches before you guests arrive, and keep them, without ice, in large pitchers. Pour individual servings out over fresh ice to serve.
