A Bright and Spicy Tex-Mex Dinner

Spicy, cheesy, and full of heart, nothing warms our bellies and souls during the doldrums of winter more than Tex-Mex cuisine. Puffy tacos, the pride and joy of San Antonio, form the centerpiece of this menu: Serve them heaped with American-sized quantities of shredded chicken, guacamole, tomatoes, lettuce, cheddar cheese, or anything else you fancy, alongside pitchers full of micheladas and frozen prickly pear margaritas for sipping throughout the night.

More About This Menu

  1. San Antonio is the capital of that flavorful border fusion we call Tex-Mex. For our favorite places to enjoy puffy tacos and other dishes, check out our roundup of San Antonio Tex-Mex.

  2. The infused tequila for the prickly pear margaritas needs to be started a couple days ahead. If you're short on time, an unflavored, good-quality tequila is equally delicious in this cocktail, or you can't go wrong with a classic margarita.

  3. For a beer to enjoy with dinner, try Texas's own Shiner Bock.

  4. If you're craving something a little more decadent than fruit for dessert, Texas boasts plenty of native sweets. From Heaven and Hell cake to Cowboy Cookies, here are a few of our favorites.

Them there "puffy tacos" are called tostadas, because quite obviously you can neither fold nor roll them (taquitos)
