Chopping Parsley
 

Parsley is grown in sandy soil, and so needs thorough washing. If dried well and stored in the refrigerator, wrapped in damp paper towels inside a plastic bag, it will stay fresh for at least a week. When chopping parsley, add a pinch of salt to keep it from sticking to the knife and the cutting board. And save the stems to add flavor to stocks.
