This meaty, comforting soup is adapted from chef Paul Flynn of the Tannery in Dungarvan, Ireland.

In Ireland, boiled bacon and cabbage is a domestic staple. The bacon is usually a "collar" or shoulder, a moderately marbled cut with less fat than American bacon but a bit more than Canadian. The ingredients are boiled together and served with potatoes and a parsley cream sauce.

Loved this soup but I made some changes. Since no one in the US has Irish bacon, I used regular. I skipped the butter and sauteed the onion and potatoes in the bacon fat, added an extra spud, used tarragon instead of the bay leaves, and used regular green cabbage. I only blended 2/3 of the soup since I like a little "chunk". Finally I put the crushed bacon as a garnish in the middle of the bowl when served. Excellent!
