Caribbean 'Polenta'

MAKES 3 CUPS

Fungi (Caribbean "polenta") is a traditional accompaniment to fish and many stews and soups.

1/2 cup finely chopped fresh or frozen okra
1/3 cups salted water to a boil in same saucepan over high heat. Reduce heat to medium-low, and gradually add cornmeal, whisking constantly. Stir in reserved okra and liquid, reduce heat to low, cover, and cook until cornmeal is soft, about 15 minutes.

3. Remove pan from heat, add butter, and stir vigorously with a wooden spoon to mix well. Season to taste with salt. Mold fungi into small mounds with a large, wet serving spoon.
