best of web seal Carrot Cake Whoopie Pies

Pretty as well as tasty, these rich carrot cakes by Abby Goes Design Scouting were almost eaten before should could make them into fabulous whoopie pies.

FROM THE RECIPE:

Sandwich flat sides of cookies together with a generous tablespoon of cream cheese filling in between.  These are good the first night, but if you store in an airtight container, they get amazingly moist and whoopie pie like on the second night.

Help! I did something wrong. I was so looking forward to eating these things but they didn't turn out (although I did eat three just to make sure they really weren't that good). I have read and reread the recipe to make sure I didn't leave out any ingredients, etc. I'm not a terribly experienced cook so the only thing I could think to check was the date on my baking soda, which I bought a couple of weeks ago and it's good. The recipe says to "Sandwich flat sides of cookies together . . ." Well, my cookies only had flat sides and they were wafer-thin. Any thoughts?
