Celery and Blue Cheese

SERVES 4

Serve this tasty salad well chilled. 

8 celery ribs, trimmed
4 oz.Maytag or other good blue cheese,
   crumbled
2 tbsp. extra-virgin olive oil
Salt and freshly cracked black pepper

1. Cut celery ribs crosswise into 1/2'' pieces, transfer to a bowl, add cheese, oil, a little salt and freshly cracked black pepper. Gently toss.
