best of web seal Christmas Beef Wellington

A well-prepared beef tenderloin is decadent on its own, but when wrapped in thin slices of salty proscuitto and encased in buttery puff pastry, the result is pure heaven.

FROM THE RECIPE:

The first thing I did was to chop up the mushrooms as finely as I could. I don't have a food processor due to lack of counter space, but that would have made this part much quicker! I added the mushrooms to a dry skillet, along with a chopped up shallot, and put it over medium heat, trying to get out a lot of the water. I took the mushrooms off once it seemed no more water was really coming out. They were still springy, but not wet.

I loved this! I have never made Beef Wellington, but I have always wanted to present it for a special occasion. It was very helpful seeing the step by step by an ordinary cook, like me.

Grilling/smoking beef wellington? Big green egg? I liked the blog, but I don't understand why this is THE beef wellington recipe offered by Saveur. Even if I trusted the first-time-go-around from this amateur cook, how am I supposed to know how to bake it... in a kitchen? On to the next idea.

We made it this Christmas Eve and it came out terrific. It is not a recipe for a beginner for sure but if you have been cooking for a while you can make it.
