This French Butter Cookie is called a sablé in France, meaning "sandy" because of the texture. The sablé is the traditional cookie presented as a gift during the holiday season in France, and Chef Jacquy has made his fair share of these cookies throughout the years. This custom is still alive in Jacquy's family. The almond, vanilla and cinnamon in the Christmas Sablés will pair well with the dark richness of an espresso.
