This tastes really good... if you get the syrup right. I boiled down some local cider, and we discovered that when cold, our cider syrup turns into cider jelly! So we either have a hot toddy with bourbon, which is great, or a cold cocktail with chunks of cider jelly in it. Tasty, but hard to mix up and sort of unappetizing-looking.
Ciderhouse Whiskey
Two simple ingredients, whiskey and cider syrup, combine to make a powerfully good drink. A twist of lemon lends a bitter brightness without diluting the richness of the cocktail.

Ingredients
2 oz. bourbon1 oz. boiled cider or cider syrup (see note)
A strip of lemon zest
Instructions
Combine bourbon and cider syrup over ice and stir gently. Twist lemon zest and drop into drink, stir again, and serve.Note: Boiled cider is a substitute to maple syrup that's found throughout Vermont, New Hampshire, and Massachusetts. To make it at home, gently boil a gallon of apple cider in a heavy-bottomed pot, stirring occasionally, until it has reduced to ⅛ (making 2 cups syrup), about 2 hours. Let cool to room temperature and store, refrigerated, in an air-tight container.

I love the idea of this cocktail but I'm thinking there is something hugely wrong with the directions for the cider syrup. A gallon of cider boiled down by an eighth will be far more than 2 cups.

Delicious autumn cocktail! My new favorite. I used a 2 quart bottle of spiced cider from Trader Joe's and boiled it down to one cup. It made a lovely spicy syrup. It was pretty thick, so you do have to stir a little bourbon into it before adding the full two ounces to dissolve it a little. Otherwise you'll have globs of syrup in your drink.

I find boiling one gallon of cider down to two and one half cups makes a good syrup consistency when stored in the fridge. Pour two and one half cups of water into your boiling pot prior to boiling the cider to see the proper level you're looking for. Great with whiskey, oatmeal, ice cream, etc.
