Greens are wonderful... this recipe is similar to my Kale recipe. I don't add sugar or vinegar but I start out crisping the bacon and removing; sauteing onion, celery and carrot (chopped finely); putting chopped, wet kale into pot to wilt down; adding 1 can chicken broth and a pinch or two of red pepper flakes, salt and pepper... cook slowly til soft. Then I toast baguette slices and serve the kale over the croutons and top with crisp bacon bits. The pot likker (pot liquor, potlikker, etc.) is to die for! Kale and Collards are my favorite greens.

My father found this Louisiana recipe for collard greens in the Wall St. Journal earlier this year that we've now made several times. Each time I wonder why we don't make them more often, they're so good! The combination of the bacon, onions, sweetened cider vinegar and hot pepper sauce seem to neutralize the natural bitterness of the greens. Do you like collard greens?
