Cucumber Salad

This crunchy salad from Elizabeth Karmel's Taming the Flame (Wiley, 2005), is a cool counter to smoked meat. This recipe first appeared in our June/July 2011 BBQ issue.

SERVES 4–6

1 cup apple cider vinegar
½ cup sugar
1½ tsp. kosher salt, plus more to taste
2 English seedless cucumbers
4 shallots, thinly-sliced crosswise
Freshly ground black pepper, to taste

In a large bowl, whisk together vinegar, sugar, and salt; set aside. Using a vegetable peeler, peel alternate 1/2"-wide strips of skin from cucumbers; discard peeled skins. Slice cucumber crosswise into 1/8"-thick rounds; add to bowl with vinegar along with shallots and toss to combine. Season with salt and pepper. Chill.

Memories of days gone by. I grew up with this salad on the table every day, in season. My mother used onions instead of shallots and in addition a splash of oil.
Cooling and refreshing.

Why is your online recipe vastly different than your printed version? In the magazine it calls for sour cream, sherry vinegar and red onion.

made the printed version and it was VERY good, and didn't look anything like this of course. Will have to try this one.

Like a previous poster, we've enjoyed my Mother-in-Law's cucumber salad recipe for decades. Using cukes from our own garden with onions & a little oil in addition to the vinegar & sugar. Even the grandkids eat it like dessert, it's so refreshing & delicious.

Perfect for the summer and so easy to throw together. Most summer salads are laden with mayonnaise and so heavy. I love how satisfying and refreshing this is, especially alongside some grilled steaks.

Splash on a little rosewater and you have something etherial.

@ DECIPIENS - what do you mean, cukes and rosewater, or rosewater in addition to the recipe above?

Sorry if it should be obvious, but I've never used rosewater before. I'd like to try it, it sounds lovely.
