If you have a slow cooker, pulled pork is a breeze to make. This recipe, from Rachel Rappaport’s blog Coconut & Lime, uses ginger preserves as well as ginger sauce to add sweet spice.

Longtime readers know of my deep and abiding love of pulled pork. I didn't grow up eating it but once I found that it is one of the easiest (and best!) things to make in a slow cooker I can't get enough. For this version, I upped the spicy and the ginger components and kept it pretty simple. Perfect for sticky-sweet-hot sandwiches topped with a bit of coleslaw.

One man's carnitas is another woman's pulled pork! I like hacking the loin (butt) into fist-sized pieces. This gives more surface area for the spices to permeate. Try it in a dutch oven over a low slow fire sometime. Great recipe!

I would think that many parts of this country would find some of the ingredients difficult to impossible to obtain. Recipes like this, to my way of thinking, may be interesting to read about but useless in practicality.

All of the ingredients were purchased at my local national chain grocery store. Very easy to find!
