FROM THE RECIPE:
I wanted to make Gougères, or cheese puffs, and had the idea of mixing in some psychedelic-colored Mimolette cheese and chives to jolt everyone into the new year. Mimolette has a certain charm and the aged versions (vieille) have a sharp tang and a good dryness to obtain nice, crusty puffs.
