Homemade pimento cheese spread is the filling or the unusual appetizer.

MAKES 8

4  3"-4 1/2"-long kosher dill pickles
1 cup grated mild cheddar or american cheese
3 tbsp. mayonnaise
1 1/2 tbsp. drained chopped pimentos

1. Cut pickles in half lengthwise. Using a small sharp knife, cut out seeds by making a shallow V down on paper towels to let drain.

2. Put cheese, mayonnaise, and pimentos into a small bowl and mix well with a fork. Using the fork, fill cavity of each pickle with some of the cheese filling, mounding filling slightly and covering whole cut side of pickle.

very uninspiring. Even the simplest of home cooks down south would add seasonings to their pimento cheese. Did someone on your staff actually get paid to come up with this recipe?

What a food snob! You say lazy, I say simple and delicious. Why would you add more seasoning if you have the right zesty dill? I'm as down South as you, get- a South Carolina girl. Sounds like all the salt has puckered you up. My kids and I loved this recipe - another great thing to do with a pickle.

artepicure....what spices would you add? Mayo has all you need, salt, vinegar, sugar, lemon. Black Pepper would not be good in this. Maybe some cayenne to spice it up.

Simple and delicious indeed! Every time I make these, they disappear before anything else, even if I double the recipe.
