Acqua pazza is Italian for “crazy water,” and this aromatic fish broth flavored with white wine, garlic, and tomatoes is crazy delicious. Evocative of the Southern Italian holidaytime Feast of the Seven Fishes, it’s a lovely dish to serve on Christmas Eve.

Cooking fish in Acqua Pazza, or "crazy water" is a great way to ensure you end up with a moist, tasty dish. This recipe was created after our recent trip to Italy, where the little tomatoes, or pomodorini are used in the sauce to cook the fish. We used halibut in this recipe, but you could use any meaty whitefish fillets.

Wonderful. FULL of flavor. Easy. Fast. Shows you that simple dishes with the freshest ingredients are sometimes the best. I used tilapia. I only wish it had had more crazy water.

'm not certain whether to add more wine, chicken, fish stock or just water to increase the liquid. If anyone has any ideas, I'd love to hear them. And...why are you still reading this? Seriously...once you try this, the recipe most likely will become a staple in your kitchen. Beautiful presentation. Easy for weeknight or good enough to impress guests. What more could you ask for.

We like capers, but this recipe called for too many...it overwhelmed the other, more delicate flavors. I had leftover crazy water, so for "leftovers" I bought fresh shrimp, made a small amount of stock from the shells and added that to the crazy water, then simmered the halved shrimp til done. Served it over whole wheat orzo. My husband loved it, much more than the original recipe.
