Italian-Style Beef Stew with Butternut Squash
Pancetta adds a rich flavor to the base of this stew.

RECIPE:
The Italian style beef stew was a great success! The beef was falling apart in your mouth tender and the squash was nice and al dente; cooked and tender but still having a firm texture. The broth was super flavourful and I did not let any of it go to waste, sopping it up with some cheesy garlic bread.

Some modifications: I dredged the beef cubes in flour prior to cooking, used 3 slices of bacon instead of pancetta, I pureed a 28oz can of whole tomatoes instead of using diced tomatoes and then added a 6oz can of tomato paste, added two peeled,cubed potatoes, added frozen peas in the final 5 to 10 minutes.
Let rest a bit before serving with a crusty baguette.
