I have veered from Robuchon's recipe in one respect – I put the chicken into a preheated oven. (He puts the chicken in and then heats the oven.)

I have that book also, And I have to say, anything that comes out of that book is great.... Robuchon's book is very easy to understand and follow. I would say it's up there with Julia Child and the Art of French Cooking. And I worship that lady... I have never done this recipe, However I have done many of his, And every one comes out Great...
