best of web seal Lemon Verbena Sorbet

Lemon verbena's currently in season, and this sorbet recipe shows it off perfectly. If you don't have access to lemon verbena, you won't get the same flavor effect if you substitute another herb. But it's still worth giving this recipe a try with mint, to create a lemony, minty sorbet or granita (if you don't have an ice cream maker).

Because I worried the little flecks of ground leaf might get in the way of the texture, I strained the mixture before churning. The resulting sorbet was of an elusive shade, teetering between yellow and green, and it was the most refreshing thing ever to grace my ice cream machine.
