best of web seal Limber de Coco (Coconut Cream Popsicles)

Savoring a cold coconut popsicle purchased at a corner bodega is a summer tradition in New York and other towns that are home to Puerto Rican communities. But you can eat better and save money by making this classic treat at home. Hints of cinnamon and vanilla add a spicy, grown-up note to this kid-friendly dessert.

FROM THE RECIPE:
I had recently bought some popsicle molds and thought that today would be a good day to make some "limber de coco."  After breakfast, I made the mix and by the late afternoon after hubby had been outside all day he was able to enjoy this cool treat.
