Maltese Spice

MAKES 3 TBSP.

The Maltese use this blend of spices for baking, preserving, and even for some savory dishes. Cassia cinnamon is so sweet it tastes like cinnamon sugar.

1 tbsp. coriander seed
1 tbsp. ground cassia cinnamon
1 tsp. ground nutmeg
1 tsp. ground ginger
1 tsp. ground cloves

1. Mix coriander seed, cassia cinnamon, nutmeg, ginger, and cloves together either with a mortar and pestle or with a coffee grinder. Keep in airtight container.
