Maple Sugar? What can I use to substitute - haven't seen maple sugar anywhere?
Maple Squares with Walnuts
Serve these chewy dessert squares, known in Quebec as Carré Érable et Noix, in shallow bowls, with a pitcher of cream to be poured over the top. This recipe first appeared in The Sweet Life, a story about Quebec's second-largest maple syrup-producing region, Bas-St-Laurent.

INGREDIENTS
8 tbsp. unsalted butter, cubed and chilled, plus more for pan1 cup plus 2 tbsp. flour, plus more for pan
1/4 cup plus 2/3 cup maple sugar
1 cup maple syrup
1 cup chopped walnuts
1/4 tsp. kosher salt
2 eggs, lightly beaten
INSTRUCTIONS
1. Heat oven to 350°. Butter and flour an 8" square baking pan; set aside.2. In a food processor, process butter, 1 cup flour, and 1/4 cup maple sugar until combined; transfer to pan and press evenly into bottom. Bake until lightly browned, about 15 minutes.
3. Whisk remaining flour and maple sugar with maple syrup, walnuts, salt, and eggs in a bowl; pour over baked crust. Bake until filling is golden brown and set, 30 to 35 minutes.

It is available...but, if you are using real 100% maple syrup, and you should go for Grade B, which is darker and richer in flavor than Grade A, with that quantity of syrup you can probably sub out light brown sugar for the maple if necessary and still have rich maple flavor. In fact, Maple sugar and syrup together seems intensely sweet! If you have a Trader Joe's store nearby, they have an excellent price/selection of real maple syrup....remember to go for the Grade B; Whole Foods also has it and I believe I have seen maple sugar at some WF stores in N. Calif. at least. Some well stocked health food stores may also sell maple sugar...Whatever you do, I would suggest that you NOT use a maple syrup "blend".
