Mashed Potato Pancakes
Forming mashed potatoes into patties and searing them on both sides gives them a crispy exterior with a creamy middle. An array of herbs or spices can be stirred into the potatoes to perfectly accompany any entree.

A few days ago Kittalog blogged about some Mashed Potato Pancakes. It just about killed me. I had to have some. So the other night I made way too many mashed potatoes accidentally on purpose, and in the morning I served these up with scrambled eggs and bacon. They were sooooo good. I could feel the plaque collecting in my arteries and my system was in shock since I rarely eat fried foods, but I was in heaven.
