Lively, tangy pozole, a traditional Mexican soup made with tomatillos and herbs, gets even more interesting with the addition of chicken and a colorful topping of radishes, lime, cilantro, and avocado.
To reel in my sweet tooth and to change things up, I picked up
some tomatillos on a whim at the grocery store. I decided on a pozole because
I've never made anything like it before. Plus, Mexican soups are tasty
business—light and full of fresh flavors.
