best of web seal Mint Chutney Potato Salad

Potato salad, heaped onto a paper plate with barbecued ribs or cold fried chicken, tastes unmistakably of summer. In this recipe, from Not Eating Out in New York, mint chutney takes the place of mayonnaise, making for a bright, ultrafresh rendition of the dish, and crisp radishes add color and crunch.

FROM THE RECIPE:

Knowing that I would have to drag [the potato salad] around with me all afternoon as I ran errands beforehand, I kept mayonnaise out of this recipe. Several friends of mine are so terrified of the egg yolks in mayonnaise turning for the worse that they even refuse to serve food with mayonnaise at their outdoor parties, for fear it'll be sitting in the sun for too long.

I'm always looking for a new potato salad recipe and this one looks interesting. I'm not sure about the radishes. Maybe I'll replace them with something else.
