Onion-Parsley Condiment

In Turkey, this onion-parsley condiment is served with grilled meats or fish. It also usually contains a dash of sumac, a spice ground from the dried, purple-red berry of the sumac bush, which grows wild in the Middle East and Italy. 

1 small red onion, peeled and thinly sliced
1 tsp. coarse salt
1/2 cup finely chopped fresh parsley
1 tsp. ground sumac

1. Mix the red onion with the salt in small bowl. Let stand 5 minutes, then rinse and drain onions thoroughly. Return to bowl and mix with fresh parsley and ground sumac.
