The dough is made out of cream cheese, butter, and flour. It was an 'ah ha' moment when I saw the cream cheese. So that explained the rich flavour! I knew it had to be more than just butter. Dorie's recipe calls for adding a jam or marmalade to the nut mixture. I was not familiar with this, Usually rugelach just contained nuts and cinnamon. But it was a brilliant addition.
