("Stegosaurus")

SERVES 8 – 10

The sheer size of this dish led to its nickname "Stegosaurus".

8-lb. shell roast of beef
Coarse salt and freshly ground black pepper

1. Preheat oven to 450°. Season beef (on the bone) with salt and pepper. Place fat side up in a roasting pan and cook for about 1 hour and 15 minutes, until internal temperature reaches 120° (beef will continue to cook to medium-rare as it rests). Transfer to a platter, reserving drippings for Yorkshire Pudding. Let beef rest for 30 minutes; serve with Horseradish Sauce.
