It's gloomy , rainy, and foggy outside - the perfect day to roast a chicken, don't you think? The sauce takes about three minutes to make, so it isn't difficult - as long as you remember to buy heavy cream and tarragon.

This is amazing! Even with a whole cup of pasta if is under 600 calories. It didn't take long, didn't make a mess and got a lot of yumms as people ate. I'm making a version of it again tomorrow but adding a few things to make it a little different if we are eating it again so soon. We're going to try some oven baked tomatoes, black olives, and maybe low fat sour cream on top but maybe not.

The recipe is a little hard to follow as it is presented in a narrative; I like lists. But, the final product was tasty! Here are some changes I made based on past experience and ingredients on hand:

*tarragon on the outside of the bird as well as inside
*olive oil instead of butter on the outside of the bird
*celery stalks under the bird, and celery leaves inside
*sour cream instead of heavy cream in the sauce
*a little flour to thicken the sauce

Ended up with a nice crisp skin and juicy meat.
