Roastbeef al pesto di erbe aromatiche
Cold roast beef with herb sauce. This partner recipe comes from the Antinori family.
2 cups chopped herbs, consisting of 6 parts basil, 2 parts parsley, 1 part mint, and 1 part stick celery
¼ clove garlic
1 tablespoon pine nuts
1 teaspoon mustard
2/3 cup olive oil
1 tablespoon lemon juice
Salt and freshly ground black pepper
Pinch of sugar
12 thin slices cold roast beef
3 tablespoons shaved Parmesan
1. In a food processor, chop the herbs, garlic, and pine nuts. Add the mustard, oil, lemon juice, salt, pepper, and sugar, and mix well.
2. Cover the slices of cold roast beef with the herb sauce and sprinkle generously with the shaved Parmesan.
