Roasted Almonds

These delicious nuts are well received at any party.

MAKES 1 LB.

INGREDIENTS

8 tbsp. unsalted butter
1 lb. raw almonds
Salt

INSTRUCTIONS

1. Clarify butter by melting it in a pan over very low heat until almost all the sizzling noises have stopped and a white foam forms. Pour the clear yellow liquid butter through a tea strainer, and discard the milky solids. Set aside.

2. Preheat oven to 375°. Bring a large pot of water to a boil. Drop in almonds and cook for 1 minute. Drain, then squeeze almonds out of their skins. This is painstaking work, but fun if you do it with company. Place them in a single layer on a cookie sheet.

3. Drizzle with clarified butter and bake until lightly roasted, 10-15 minutes. Sprinkle with salt to taste.

Almonds are covered in greasy butter! I used salt and chipotle powder and they slide off the nuts, ending up on the cookie sheet and a paper towel and not on the almonds! I was very careful about the amount of butter I used but it was still, apparently, too much. I won't be making this again.

I also wish directions included make ahead and storage.
Too greasy. You can manage with 2 tbs if you put the almonds in a bowl or a plastic bag, put the butter over and stir. Drizzle the salt, or desired spices, when they are put on the cookiesheet. I like Nigellas spicy nuts, but decrease the sweet ingredients. The nuts, themselves are healthy!
