So simple for the very good results. I thought I had a fruit vinegar but didn't so I used a very rich balsamic. I found it more effort than it was worth to take the bones off to produce the pretty slices, so next time I will use boneless breasts with their skin. I threw some vegetables in to roast at the same time. So very simple and very good. A new weeknight dinner.
