A fall walk through New York's Greenmarket with Eleven Madison Park's chef, Daniel Humm, brought ideas for two radically different approaches to potatoes.

Roast a variety of fingerling potatoes from the farmers' market with figs, thyme and whole garlic cloves still in their jackets. Or get all chef-y and create mashed potatoes as they do in Mr. Humm's kitchen.

It is disturbing that one cannot obtain some of your recipes (as in the one from the New York Times for roasted potatoes with figs and thyme) without a separate membership from the paper. Why put recipes here that cannot be viewed?
