Spanish-Style Toast with Tomato (Pan Con Tomate)

This snack calls for good-quality olive oil and a ripe tomato.

SERVES 2

INGREDIENTS

1 6" piece of baguette, halved lengthwise
1 clove garlic
2 tbsp. extra-virgin olive oil
1 very ripe large tomato
Coarse sea salt, to taste

INSTRUCTIONS

1. Heat oven to 500˚. Put bread on a baking sheet and toast until golden brown, about 8 minutes. Rub garlic over cut surface of bread and drizzle with oil.


2. Put a box grater into a large bowl and grate tomato over largest holes, discarding skin. Spoon grated tomato onto toast and sprinkle with sea salt.

Tastes even better if made the real Catalan way. Only rub the tomato on the bread.

In Barcelona, they rub the tomato into the bread until only the peel is left. It's wonderful.

If this recipe had the Catalan name "pa amb tomàquet", I would expect the tomato to be rubbed on the bread. Since it is instead titled "pan con tomate", this recipe is completely authentic. I live in Madrid and toasted bread with tomato puree (often served on the side) is commonly eaten for breakfast, merienda, or as a tapa. It's even better with cured ham or cheese on top. Yum.
