Stuffed vegetables make for a fine side dish, but in this recipe, baby eggplants become an entire meal when filled with a Middle Eastern–inspired stuffing of lamb, mint, and feta cheese. Feel free to add a touch more hot pepper for a more vivid flavor.

If you end up with any leftover filling (or if you just can't be bothered with stuffing eggplants in the first place), you can also spoon it onto couscous, pasta or rice instead. It's not as pretty, but it's still awfully tasty.

We used walnuts instead of pine nuts, pumped up the red pepper flakes, and served a salad on the side. Tasty.

I LOVED this recipe! The Savory goodness of the lamb mixed with the zest of the mint and the sweet of the cinnamon was so good. I especially liked this recipe because it was so easy. I served with rice. Very good!

I really liked this but my wife has an aversion to lamb. I will try with ground beef next time.
