The Ultimate Grilled Cheese Sandwich

The secret to making a perfect grilled cheese sandwich is cooking it over low heat, which brings out the subtle flavors of a cheese, and slathering the bread with butter, which crisps it in the pan. Comté, with its semifirm texture and nutty taste, is great for grilling.

4 tbsp. unsalted butter, softened
4  1⁄2"-thick slices sourdough bread
1 8-oz. piece comté cheese, grated

1. Spread butter evenly on both sides of each slice of bread. Put half the cheese on one slice and half on another. Top each with remaining bread slices. Heat a 12" cast-iron skillet over medium-low heat.

2. Add sandwiches to skillet and cook, flipping once with a metal spatula, until golden brown and crusty on both sides, 18–20 minutes. Transfer sandwiches to a cutting board and slice in half with a knife. Serve warm.

I love trying new cheese and this recipe did not disappoint. Grilled cheese will never be the same again. The perfect amount of salt and richness combines to make an excellent sandwich.

I did make a sandwich with a single tablespoon of butter + under 2 oz. of cheese that was still magnificent! Gooey goodness...

I have to say, in order for this to truly be the "Ultimate" grilled cheese sandwich you must replace the butter with duck fat...otherwise, you're right on track!

The real secret is that you must grill both sides of the bread. You grill one side and then flip it over and then you place the cheese on the grilled side.

Of course this is great, but I would add that cave aged Gruyere works equally well, although not French... Add a tiny sprinkle of nutmeg to the cheese for a fuller mouth feel...it's great!

I am a "cheese-aholic" but have never liked "swiss" cheeses. After reading this recipe, I decided to give it a shot. I went with the comte cheese and I must admit, I am now officially addicted.

This gives a whole new meaning to Grilled Cheese!

Never met a cheese sandwich I didn’t love but this one is truly ultimate. Comté is what the doctor ordered and the sandwich without sourdough bread is simply not negotiable. The combination of flavors supporting each other is terrific!

yes, compte is an incredible cheese, but i didn't find this grilled cheese to be anything beyond good.
