Grilled King Crab Legs

Sweet king crab legs gain a smoky edge when grilled. This recipe is adapted from one in For Cod and Country (Sterling Epicure, 2011) by Barton Seaver. This recipe first appeared in the 2012 SAVEUR 100, with the article New Fish Cookbooks.

SERVES 4

INGREDIENTS

2 lb. Alaskan king crab legs, thawed
Lemon wedges, for serving
Clarified butter, for serving

INSTRUCTIONS

Build a hot fire in a charcoal grill or heat a gas grill to high. (Alternatively, heat a cast-iron grill pan over high heat.) Add crab legs; cook, turning, until shells are charred and crab meat is heated through, about 8 minutes. Serve with lemons and butter.

Here is an alternative to grilling king crab legs. Place the wet paper towels on foil. Place crab legs on top of wet paper towels. Sprinkle legs with California style garlic powder. Warp wet paper towels around legs. Seal the wrapped legs in foil. Place on hot grill for about 8-10 minutes depending on the amount of legs. Turn packet over in 4 to 5 minutes.
