Sweet Potato French Fries

These surprisingly spicy sweet potato fries are the perfect complement to Rare Vos, a spicy, lively and refreshing copper hued amber ale.

Ingredients

Sweet potatoes, one per person
Olive oil
2 tbsp. ground coriander
1 tbsp. ground fennel
1 tbsp. dried oregano
1 tbsp. Aleppo Pepper (or use a smaller amount of cayenne pepper)
2 tbsp. kosher salt

Instructions

1. Preheat oven to 425 F. Peel sweet potatoes and cut into strips about 3 inches long and 3⁄4 inches thick.

2. In plastic bowl, toss together cut sweet potatoes, olive oil, and spice mixture. You will need about 1 tbsp. olive oil and 2 tsp. spice mixture for every two sweet potatoes.

3. Grease cookie sheet or use non-stick pan. Spread out sweet potatoes in single layer. Roast 30-40 minutes, turning every ten minutes. Sweet potatoes should be softened through and lightly browned. (They will only be slightly crisp. To increase crispness raise the temperature to 450 degrees).
