Hot buttered rum is a holiday staple. But mix in some ice cream and this family favorite only gets better. Keep a batch on hand in the freezer for unexpected holiday guests.

When a recipe for an ice cream version fell in my lap some years ago, I thought I'd died and gone to heaven. It was fabulous, but then I began to notice that the drink became cloying and overly rich after only a few sips, plus the spices weren't pronounced enough. So the tweaking began and this recipe is the result.

Ice cream with "hot" buttered rum. Can it get any better? I have a hot run drink to recommend that won't be as "boring" as the original that Luna Cafe was working with. Closer to the original idea maybe? In a little stoneware mug or heatproof cup....fresh or "natural" apple cider (cloudy, not the processed stuff) heated (micro is ok) to the temp for a warming drink, add a shot of spiced rum (Captain Morgan's or make your own). Stir with a teaspoon that has been loaded with creamed butter and brown sugar (equal parts). Serve next to a warm fire if possible. Vary the rum, cider, butter/sugar proportions to your tastes and/or age. Skip the rum and serve to under agers in the house. YUM.
