A chilled vermentino is a thing of beauty, and the version recently released by the Sardinian winemaker Pala is as good as it gets. The white wine is medium-bodied, with fleshy notes of stone fruit and herbal overtones, and the producer ferments it in stainless-steel tanks for a supremely crisp finish. It makes for a perfect pairing with our favorite preparation for whole roasted red snapper (the handsome fellow in this video is SAVEUR's very own kitchen director, Hunter Lewis).
