At Nico's Pier 38, Lyon-born chef Nico Chaize serves some of Oahu's most creative drinks, like a citrusy marriage of cognac and Hawaiian vodka that he sweetens with passion fruit syrup. This recipe first appeared in the iPad edition of our October 2013 issue with the article A Toast to Paradise.
⅓ oz.passion fruit syup, preferably Lilikoi Passion Fruit Syrup
2 oz.lemon-lime soda
1rock candy swizzle stick, for garnish
Twist and rub lemon zest around rim of a martini glass and drop into a martini glass. Combine cognac, vodka, and syrup in a cocktail shaker filled with ice. Shake vigorously and pour into glass; top with soda and garnish with rock candy stick.
