SERVES 1

Sugarcane and rum are lifelines of Cuba's economy, and their marriage in the mojito is a potent expression of the island's identity. At celebrated Havana bars, mojitos are an essential part of the nightly proceedings.

1 tsp. sugar
1 tbsp. fresh lime juice
1/2 bunch fresh mint
1 oz. dry white rum
2 oz. club soda

1. Mix sugar with lime juice in a tall glass. Add 3–4 ice cubes and several sprigs of mint, then pour in rum and club soda. Stir well, garnish with a bit more mint and serve.
