Sedano e Pomodori Brasati (Braised Celery and Tomato)

This recipe, adapted from one in Marcella Hazan's Essentials of Classic Italian Cooking (Alfred A. Knopf, 1992), produces results that are surprising from celery: creamy, sweet, luscious.
