The pudding (NOT a pastry!) is cooked in a tin under the roasting meat so that gravy drips on it and flavours the pudding. Then the pudding is eaten BEFORE the main part of the course, by itself or with gravy. The meat and vegetables come next.
The purpose of Yorkshire pudding was to fill bellies so that they didn't want as much meat. It's much the same as eating 'savoury pudding' (a mixture of breadcrumbs, egg, onions and herbs cooked in a tray under the meat) before the meat course of the Christmas meal.
This family still has savoury pudding at Christmas, it's expected, a tradition which must not be omitted.
