What is the percentage of fat in the home made butter?
I make mine with heavy whipping cream and would like to know it's fat content

This reminds me of one of the most pivotal culinary experiences of my life. In first grade, our teacher let us grow radishes, carrots and lettuces in planter boxes on the terrace outside of our classroom. The day before harvesting them, we were instructed to ask our moms to put two extra slices of bread in our lunch boxes. Our teacher brought a bottle of heavy cream to class, and small groups of us were given empty jars into which the rich cream was poured. We took turns vigorously shaking the cream until it turned to butter! We spread our homemade butter on the fluffy white bread, sliced the little veggies, and made the loveliest little sandwiches I have ever eaten. Sweeter butter I have never tasted. That was in 1954 and the memory still lingers. NEVER have bread, butter and veggies tasted so heavenly! I was spellbound. I became an avid gardener and a professional chef. That experience, along with the culinary training I received at my mother's knee, gave birth to my wonderful career. Never, ever underestimate the power of the knowledge and learning experiences you share with others.
